Deviled Eggs

A nutritious twist on a breakfast classic.

INGREDIENTS

  • 12 large eggs
  • ½ cup avocado or olive oil mayonnaise (e.g. Primal Kitchen or homemade)
  • 1.5 tsp Dijon mustard
  • 1.5 tsp lemon juice
  • 2 tbsp capers drained, rinsed, and chopped
  • ¾ tsp salt
  • ¼ tsp black pepper
  • Paprika for garnish

DIRECTIONS

  1. Place eggs in a pot and add water to cover eggs.
  2. Place pot on the stove on medium-high heat and bring to a boil for 12 minutes and remove from heat.   
  3. Once eggs are cool, peel and slice in half lengthwise and place the yolks in a small bowl. 
  4. Mash the egg yolks using a fork. 
  5. Add the remaining ingredients to the bowl and mix well.
  6. Spoon the yolk mixture into the eggs and garnish with paprika before placing the eggs on your serving tray.
