Eggs and Black Bean Breakfast

A protein-filled breakfast with fiber, fresh vegetables, and lots of flavor.

  • 2 tsp avocado oil
  • 2 garlic cloves, crushed
  • 2 large eggs
  • 1 16-oz can black beans, rinsed 
  • ½ can (8 oz) crushed tomatoes
  • Dash of salt
  • ¼ tsp cumin seeds
  • 1 avocado, sliced
  • 1 bunch cilantro, chopped
  • ½ lime
  • Salt and pepper to taste

PREP

  1. Heat the oil in a large pan on medium heat
  2. Add the garlic, stirring frequently and cooking until golden (2-3 minutes). 
  3. Crack the eggs on the other side of the pan. 
  4. Once the eggs begin to set, add the beans, crushed tomatoes, cumin seeds and dash of salt around the pan.
  5. When the mixture has warmed throughout and the eggs are ready, remove the pan from the heat.
  6. Add the sliced avocado and cilantro, more salt and pepper to taste, and squeeze half the lime over the top. Serve warm.
