This dish is an easy way to sneak some omega-3-rich seafood into your diet if you generally don't enjoy a fishy taste. You can use snapper, white fish, or any type you have on hand. Just make sure your tomatoes are nice and ripe, which adds not only a sweet flavor but also lycopene, a powerful antioxidant found in tomatoes that’s more abundant when cooked. 
 

Ingredients

  • 1 pound (1⁄2 kg) red snapper (or other type of fish), cleaned and gutted.
  • 2 tablespoons of avocado oil, coconut oil or ghee 
  • 1 large onion, sliced 
  • 3 or 4 medium-sized tomatoes, chopped 
  • 2 eggs, beaten 
  • 1⁄2 cup water 
  • A dash ground pepper 
  • 1 bunch parsley (for garnish) 


Directions

  1. Slice the cleaned fish into six pieces. 
  2. Heat the oil or ghee in a frying pan. 
  3. Sauté fish until golden brown. Set aside on top of a paper towel.
  4. Sauté onion and tomatoes (2-3 minutes). 
  5. Add the water and bring to a boil, then add the fish and simmer for 3 minutes.
  6. Slowly add the eggs while continuously mixing. Cover and let simmer for 5-10 minutes. 
  7. Season with fish sauce and ground black pepper.
  8. Place in a serving platter and garnish with parsley.
